Oven-Roasting Peppers
Roasting is easy, and you’ll love how it enhances the flavor.

Place peppers on a baking sheet under broiler and heat. Watch closely and turn peppers as they blister and the skin roasts and turns black.
When peppers are evenly roasted, about 20 minutes, remove from oven and place in paper bag to “sweat” the peppers, about 20 minutes.
Place peppers on cutting board. Remove blistered skin, seeds and stem. Use as directed in recipe.
